Paneer Masala Gravy, Like never before!

Paneer lovers , this is for you !  Paneer masala is a scrumptious curry that makes you go weak over knees. It is totally low on fat but definitely rich with some good stuff. Nutty and delicious side dish for your everyday roti or for special nights tandoori naan. 
Paneer masala gravy adapted from Cookingshooking  is so surreal and rustic.The secret to excel in its making was to have lots of patience and cook everything until oil starts to separate from the mixture. Isn’t this the beauty of cooking??
The more love and time you invest in it , the better the results would be !

Ingredients


For marination :
  • 250 gm : Paneer cubed
  • Salt to taste 
  • 1 tsp : Red chilli powder
  • 1 tsp : Ginger Garlic paste
  • 1 tsp : Coriander cumin powder
  • 1/2 tsp : Garam masala powder
  • 1/4 tsp : Turmeric
  • 1 tbsp : Water

For the Gravy : 
  • 2 tbsp : Oil
  • 2 tbsp : Ghee/ Clarified Butter
  • 1 tsp : Cumin seeds
  • 2 no’s : Cardamoms 
  • An inch piece : Cinnamon 
  • 4  no’s : Cloves
  • 2 large : Onions Minced
  • 3 medium : Tomato Crushed 
  • 1 inch : Ginger julienne d 
  • 4 no’s : Garlic cloves sliced
  • 1 tsp : Red chilli powder
  • 1/4 tsp : Crushed Black pepper
  • 1 tbsp : Crushed Kasuri Methi
  • 1 tsp : Garam masala 
  • 1 tbsp : Gram flour
  • Chopped coriander

Method : 
  • Before we begin with the curry let’s marinate the paneer cubes. 
  • To a bowl add the paneer cubes,salt, red Chilli, ginger garlic paste,Coriander cumin powder, Garam masala powder, turmeric.
  • Give them a good toss adding a tablespoon of water.
  •  Set this aside for half hour.
  • To a deep pan or Kadhai add the ghee and oil. Once it’s hot add in the cumin seeds, while Garam masala and cook until fragrant.
  • Add the mixed onions, ginger juliennes , garlic slices and cook until everything turns brown in colored.
             
          

           


  • Now stir in the dry spices I.e Red Chilli powder, Coriander powder, Garam masala powder, Kasuri Methi Crushed, black pepper, chopped coriander and salt to taste.

             
  • Cook the spices for a minute.
              
  • Add the gram flour and roast on medium heat until It turns aromatic.
               

              

  • Time to add in the chopped coriander and crushed tomatoes.
              

             
  • Stir them good and cook covered on medium heat stirring in intervals and tiny droplets of fat appear on the top.
  • While that’s getting done , on the other hand add a spoonful of ghee to a sauce pan and cook the marinated paneer cubes for a minute or two on high heat. This step tenderizes the paneer and turns them succulent so do not skip.
  • Add the paneer cubes to the cooked gravy along a cup of water. 

            

  • Give this a good stir and cook covered for couple of minutes.


          


  • The flavorsome Paneer masala gravy is done and ready to devour.
