Double Chocolate Banana Muffins


Banana is the humble breakfast fruit saved by Queensland scientists.
Banana is s poor man's power house that calms down his hunger pangs instantly and also provides with multiple nutritional values that includes vitamin B6, minerals, dietary fibre and potassium.
Banana is the only fruit eaten by majority of the lot and it is the only fruit available in abundance at just minimal price .
Making use of such healthy and rich fruit here i bring to you, the Deliciously soft and moist chocolate muffins loaded with the taste of banana, studded with chocolate chunks and macadamia nuts.
It makes an instant hit in your parties and adorns any dinner table with its beauty.


Ingredients to make Double Chocolate Banana Muffins
  • 1 1/2 cups : Maida/All purpose flour
  • 1/2 cup : Cocoa powder
  • 1/2 cup : Granulated Sugar
  • 1/2 cup : Dark brown Sugar
  • 2 tsp : Baking powder
  • 1/2 tsp : Baking Soda
  • 1/4 tsp : Salt
  • 1 cup : Chocolate chips/chunks
  • 1 no : Large Egg
  • 2 large : Ripened Banana
  • 2 tsp : Vanilla extract
  • 1/4 cup : Vegetable Oil
  • 1 cup : Greek Yogurt
  • As needed : Chopped Macadamia nuts(Optional)

Method:

  • Preheat the oven to 180'C. Line a 12 hole muffin pan with muffin cases and set aside. 
  • Sift the flour, baking powder, baking soda, cocoa powder and salt together. 
  • Stir in the granulated sugar, brown sugar and toss in the chocolate chunks and set aside.
  • To another bowl add eggs, mashed banana, vanilla, egg, vegetable oil and yogurt. Whisk them well until combined.
  • Add the dry ingredients to wet mixture and combine until uniform and lump free batter.
  • Divide the batter evenly between the muffin cases up to 3/4 full.
  • Generously sprinkle the chopped macadamia nuts over the batter.
  • Bake for 25 to 30 minutes or until a toothpick inserted comes out clean. Few moist crumbs are fine.
  • Allow them to cool for five minutes in the muffin pan and later transfer them on to a wire rack to cool completely.

Delicious Banana double chocolate muffins are ready to gorge. Don't they look scrumptious ?

  • They stay good at room temperature stored in an airtight container for upto 4 to 5 days.



My tip : 
The amount of sugar added, may be reduced to 3/4 cup depending on the sweetness of bananas.
