Corn Patties , a healthy treat !

Corn patties, as the name says are made of Corn. These patties are mildly sweet , delicate and are bursting with flavor. The earthy aroma of fried patties makes one crave for more and more.
They are a great way to use fresh corn once the thrill of eating corn on the cob has worn off a bit and you're looking for something new.
Corn patties is a simple, easy recipe that involves minimum preparation and cook time but yields excellent results. 
Tantalize your taste buds preparing these delicious Corn patties making use of that fresh corn that is abundantly in season now.  These can be served as a breakfast, snack and also as an appetizer. Interesting isnt it ?
So without any further due lets head to the recipe.




Ingredients required for Corn patties :
  • 2 large : Corn on cobs
  • 4 : Medium Potatoes 
  • 1/2 cup : Gram flour
  • 1/2 cup : Chopped Onion
  • 1/2 cup : Chopped Carrots 
  • 1/4 cup : Chopped Coriander 
  • 2 tbsp : Chopped Ginger
  • 2 tsp : Chopped Green chili
  • 1 tbsp : Coriander powder
  • 1 tsp : Garam Masala powder
  • 1 tsp : Crushed black pepper 
  • 1 tsp : Red Chilli powder 
  • 1/4 tsp : Turmeric 
  • Salt to taste

Method
  • To begin with grate the cobs and squeeze out extra moisture. 
  • Boil  the potato, Peel and mash them once cooled.
  • To a mixing bowl add all the ingredients listed and give them a good mix.


  • Scoop out enough mixture and shape into patties on moist palms.
  • At this point you can freeze them upto a week and use when required.



  • Shallow fry the patties adding enough oil until golden on both the sides.



  • This quantity yields around 12 patties so shape and repeat frying accordingly.
  • Once done  serve them hot with green chutney , ketchup or garlic Mayonnaise. 


Crisp on the outside but soft and succulent on the inside , Yum ! these Corn Patties make a perfect  snack along some adrak wali Chai.



Few Pointers :
  • Make sure to use fresh corn for this particular recipe as the frozen or canned corn are packed partially cooked and the moist content is really high in them due to which the shaping and frying can be difficult.
  • The gram flour can be adjusted according the moisture content of the mixture.
  • Bread crumbs can be incorporated for easy binding.
  • Instead of patties the mix can be can be rolled into balls and fried in Appe pan or can also be deep fried to preference.
  • The shaped patties can be frozen upto a week and more.
